Pistachio Madeleines

Preheat oven to 375º

1 cup sifted cake flour

6 ounces raw, unsalted pistachios, very finely ground

½ teaspoon baking powder

¼ teaspoon salt

1¾ sticks unsalted butter (14 tablespoons), softened

3 large eggs

1 large egg yolk

1 cup sugar

2 teaspoons vanilla

confectioners’ sugar

Sift together the flour, pistachios, baking powder and salt. Return mixture to the sifter and set aside.

In a medium bowl, mash the softened butter with the back of a spoon or spatula until creamy.
